Biscuits

We make three different biscuit doughs: chocolate, vanilla and gingerbread.

We only use natural ingredients in our doughs which are as follows: real butter, free-range eggs, fair trade sugar and flour.

For our vanilla biscuits we add Ugandan vanilla pods or paste
For our chocolate recipe we add golden syrup and cocoa powder.
For our gingerbread recipe we add golden syrup, black treacle and a blend of spices.

Our dough recipes do not contain nuts but we cannot guarantee that they are nut free as we make macarons (full of almonds) in the same kitchen.

The biscuits are not gluten free.

Our royal icing is made with meringue powder, which is mainly made of dried egg white and sugar, icing sugar and food colourings (not E120). Please see full ingredient list below.

Biscuit ingredient list

Chocolate, Butter (milk), Egg, Sugar, Wheat flour (Wheat flour, calcium carbonate, Niacin, Thiamin), Raising Agents (Monocalcium Phosphate, Sodium Bicarbonate) .

Other ingredients specific to chocolate dough: Golden Syrup (Partially Inverted Refiners Syrup), Cocoa powder (100% cocoa, may contain milk).

Other ingredients specific to gingerbread dough: Black treacle (Cane Molasses, Contains naturally occuring Sulphites), Golden Syrup (Partially Inverted Refiners Syrup), Spices (Cinnamon, Ginger).

Other ingredients specific to vanilla dough: Vanilla pod or Vanilla Bean Paste (Sugar, Water, Vanilla Extract, Vanilla Pods, Gum Tragacanth).

E numbers which are included in the food colourings are as follows: E422, E551, E133, E122, E1520, E102, E155, E124, E104.

Full ingredient list for meringue powder is as follows: Wheat starch, Dried egg albumen, Sugar, Modified starch, Acidity regulators (calcium lactate, tartaric acid, cream of tartare, lactic acid), Dextrose, Stabiliser (guar gum).

Macarons

Our macarons are made from ground almonds, sugar, free-range egg and food colouring (not E120). See list below for all the E numbers which we use (dependant on macaron colour).

We use three types of filling: ganache, buttercream and curd.

Our ganache is made from chocolate and cream.
Our buttercream is made from egg yolks, butter, sugar and water.
Our curd is made from free-range egg yolks, corn flour, sugar, butter and fresh fruit juices.

Full ingredient list for the curd filling is as follows: Lemon or Lime juice & zest or Passion fruit juice or Elderflower cordial (sugar, water, fresh elderflower, lemon juice, citric acid), Cornflour, Butter (milk), Sugar, Egg.

Full ingredient list for the buttercream filling is as follows: Butter (milk), Sugar, Egg.

Flavour dependant ingredients: Chocolate, White Chocolate, Vanilla Pod or Vanilla Bean Paste (Sugar, Water, Vanilla Extract, Vanilla Pods, Gum Tragacanth), Fruit juices (Orange ,Lemon ,Lime ,Passion Fruit, Elderflower), Macha Tea, Honey, Tahini (sesame seed), Coconut, Chestnuts, Hazelnuts, Peanut Butter, Raspberries, Pistachio Butter, Coffee, Peppermint, Chilli flakes.
